But first, cocktails! Put a little pep in for step and a new drink in your glass. We have put together some fun cocktails that are perfect for mixing up for friends, or yourself. You’re an adult, you can make your own decisions. For all of the upcoming holidays, let’s mix em up and pour some out (into a glass) and have some fun in the sun. Shake, shake it up!

Cinco de Mayo Cocktails

Colsa Martini

● In a glass, combine 1 ½ ounces of tequila blanco, ½ ounce of white vermouth, and 2 dashes of grapefruit bitters.

● Pour mixture in a coupe glass with ice and garnish with a grapefruit twist.

El Coco Carlos

● In a cocktail shaker, muddle an orange wedge then combine with 2 ounces of reposado tequila,

1 ounce of coconut water, ¾ ounce of freshly squeezed lime juice, ½ ounce of agave syrup, and some ice cubes. Shake until well-combined and chilled.

● Strain into a salted rocks glass and garnish with an orange twist, if desired.

Paloma (the most popular drink in Mexico on Cinco de Mayo)

● Salt the rim of a glass by rubbing a grapefruit wedge around the edge and dipping it onto a small plate of salt.

● In a glass, mix 2 ounces of tequila, 2 ounces of freshly squeezed grapefruit juice, 2 ounces of sparkling soda, ½ ounce of freshly squeezed lime juice, and ¼ ounce of agave nectar or simple syrup.

● Fill the remainder of the glass with ice and garnish with a grapefruit wedge.

Pomegranate-Thyme Spritz

● In a small saucepan, combine a ½ cup of granulated sugar and a ½ cup of pomegranate juice.

Stir once halfway through, until the sugar is dissolved (~12 minutes). Remove from the heat and add springs of thyme, 1 teaspoon of grated orange zest, and 2 tablespoons of fresh orange juice. Strain after cooling to room temperature.

● In a large pitcher, mix together 1 cup of vodka, ¾ cup of fresh orange juice, and ½ cup of the pomegranate-thyme syrup. Stir in Prosecco, cava, or champagne and pour over ice with pomegranate seeds, a spring of thyme, and an orange twist.

Fleur de Paradis

● In a cocktail shaker, combine 2 ounces of gin, ¾ ounces of elderflower liqueur, ½ ounce of freshly squeezed grapefruit juice, ½ ounce of freshly squeezed lemon juice, ¼ ounce of simple syrup, 1 dash of orange bitters, and some ice cubes. Shake until well-combined and chilled.

● Strain your mixture into a coupe glass, top with champagne, and garnish with an edible flower, if desired.

Lavender Honey Cream

● In a cocktail shaker, combine 1 ½ ounces of botanical spirit, 1 ounce of lavender honey syrup, 1 ounce of heavy cream, and 1 large egg white. Dry shake until combined.

● Add ice and shake again until chilled.

● Strain into coupe glass and garnish with lavender blossoms, if desired.

Americano

● In a glass, stir together 1 ounce of Campari and 1 ounce of vermouth.

● Add ice, top with 4 ounces of sparkling water, and stir lightly.

● Garnish with lemon or orange wedge, if desired.

Legendary Lemonade

● In a pitcher, add 2 parts vodka, 2 parts lemonade, and 2 parts sparkling Moscato.

● Pour into rocks glasses filled with ice and garnish with lemon wheels, strawberries, or raspberries.

Red White and Blue Layered Cocktail

● Add 1 ounce of grenadine to a glass and fill with ice to create the red layer of the drink.

● In a cocktail shaker, combine 3 ounces of lemonade and 1 ounce of vodka.

● Carefully pour the mixture over the back of a spoon into the glass of grenadine, creating the white layer of the drink.

● Carefully pour 1 ounce of blue curacao over the back of a spoon into the glass to create the final blue layer.

Backyard Cooler

● In a cocktail shaker, combine 1 ½ ounces of gin, ½ ounce of grapefruit juice, ½ ounce of simple syrup, and some ice. Shake until well-combined and chilled.

● Strain into a glass with ice, top with sparkling water, and garnish with a half grapefruit wheel, if desired.

Chile-Lime-Pineapple Soda

● Crush 1 tablespoon of pink peppercorns (if you do not have a mortar or pestle, the side of a knife will work fine).

● Remove the zest of a lime with wide strips leaving behind the white pith (a vegetable peeler will

come in handy).

● Add peppercorns, lime strips, 2 whole dried chiles de árbol, 3 cups of fresh pineapple juice, ½ cup of sugar, and a pinch of salt into a jar and stir until most of the sugar is dissolved. Cover and chill for 8-12 hours.

● Strain the juice mixture.

● To make one drink, pour ¼ cup of juice into a glass filled with ice and top with ¾ cup of sparkling water. Garnish with lime wedge and crushed chile de árbol.

Cucumber-Lime Gimlet

● Muddle 2 slices of cucumber (¼ inch thick) and 1 ½ fresh basil leaves (large) in a cocktail shaker.

● Add 1 ½ ounces of vodka, 1 ounce of lemonade, ¼ ounce of freshly squeezed lime juice, and some ice to the cocktail shaker. Shake until well-combined and chilled.

● Strain into a glass filled with ice. Garnish with a basil leaf, if desired.

Casa Calavera The recent opening of Virgin Hotels includes a wave of new drinking and dining spots. Casa Calavera replaces Pink Taco (from when the property was known as the Hard Rock) and is a dramatic improvement. Operated by the Hakkasan Group, the Mexican restaurant has a Day of the Dead theme with skulls and murals featured throughout the dining room. Hussong’s Cantina – A true piece of Baja California’s heritage, the original Hussong’s Cantina in the Mexican town of Ensenada claims to be the birthplace of the Margarita. So you could argue Hussong’s is the best place to get a strong, authentic version of the cocktail. Feel free to try a fun variation. The bartenders mix versions with blackberries, jalapeños and cucumber to enhance the natural flavor of the tequila.
